Spinach and Lentil Salad with Citrus Dressing

A fresh, colourful salad that brings together leafy greens, lentils and a bright citrus dressing. With folate, fibre and healthy fats from avocado and seeds, it fits easily into a balanced, everyday way of eating.

Ingredients

  • 2 cups (40g) fresh spinach (folate-rich)
  • 1/2 cup (75g) cooked lentils (high in folate)
  • 1/3 cup (60g) cooked barley or brown rice
  • 1/2 (100g) avocado, sliced
  • 1/4 cup (60g) cherry tomatoes, halved
  • 1 tablespoon sunflower seeds
  • 1 small orange (for juice and zest)
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method

  1. Combine spinach, lentils, rice or barley, avocado, and cherry tomatoes in a large bowl.
  2. Whisk together fresh orange juice, olive oil, Dijon mustard, salt, and pepper for the dressing.
  3. Drizzle the dressing over the salad and toss gently.
  4. Sprinkle sunflower seeds and orange zest on top for an extra crunch and flavour.

Tip: add extra orange segments for a contrast in texture.
