Spinach and Lentil Salad with Citrus Dressing

A fresh, colourful salad that brings together leafy greens, lentils and a bright citrus dressing. With folate, fibre and healthy fats from avocado and seeds, it fits easily into a balanced, everyday way of eating.
Ingredients
- 2 cups (40g) fresh spinach (folate-rich)
- 1/2 cup (75g) cooked lentils (high in folate)
- 1/3 cup (60g) cooked barley or brown rice
- 1/2 (100g) avocado, sliced
- 1/4 cup (60g) cherry tomatoes, halved
- 1 tablespoon sunflower seeds
- 1 small orange (for juice and zest)
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Method
- Combine spinach, lentils, rice or barley, avocado, and cherry tomatoes in a large bowl.
- Whisk together fresh orange juice, olive oil, Dijon mustard, salt, and pepper for the dressing.
- Drizzle the dressing over the salad and toss gently.
- Sprinkle sunflower seeds and orange zest on top for an extra crunch and flavour.
Tip: add extra orange segments for a contrast in texture.
